Gathering parts for a sIII. Was going to use SOZO caps but picked up some mustards instead. However............ I picked up the .027 fairly cheap. Any issues / concerns / problems with using a higher value? If I use these would I need to adjust the value of any resistors?

They will be fine. The tolerance on capacitors will be low, so they will work perfectly. No worries.
