I have 2 1x12 cabs each loaded with an 8 ohm speaker. If I want to use both cabs at the same time, I would set the impedance on my Trinity TMB to 4 ohms, correct?

That is correct, assuming that the speaker connection on the back of your amp is a parallel connection...which most are...
